Salmon Cucumber Noodle Salad (Video)
Making a quick and nutritious paleo lunch doesn’t require the whole kitchen. Watch how I make a cold noodle salad in seconds.
Ingredients:
2 whole cucumbers (English cukes have smaller/less seeds)
1/4 cup cherry tomatoes
1 tbsp olive oil
1 tbsp lemon juice or apple cider vinegar
salt and pepper to taste
1 can wild salmon (or leftover salmon steak)Directions
- Julienne or spiralize your cucumber. I use this handy cutter which you can find here. It’s small, convenient, fast to use, and easy to clean.
- Toss noodles in olive oil lemon juice, salt & pepper. I am using basil infused olive oil. You may season however you’d like or toss in your favorite paleo dressing.
- Top with cherry tomatoes and canned wild salmon.
