Tuna Salad Lettuce Wraps

photo 4The best substitute for bread or a bun is lettuce. Simply think of your favorite sandwich or hamburger and convert it to a lettuce wrap. The key though, is to use lettuce that wont wilt or tear. I use living bibb or butter lettuce. I find it the best for optimal wrappage. Also, the taste is basically non-existent. But who enjoys eating plain lettuce anyways? It’s really only there to hold all the delicious ingredients in place while you take a bite.

Living lettuce is exactly that – still alive. Most people forget that once produce is picked it’s starting to lose nutrients and die. Living lettuce is sold with roots and some soil in tact which keeps it fresh and full of nutrients. It also lasts longer in your fridge so you can make more lettuce wraps throughout the week!

Ingredients:

  • 3 leaves living butter lettuce
  • 1 can wild tuna
  • 1/2 very ripe avocado (or 1/3 cup quacamole)
  • shredded carrot
  • sliced onion
  • sliced tomato

Directions:

Mash the tuna and avocado together until evenly combined. Break off pieces of lettuce. Fill the lettuce with a huge spoonful of tuna mixture. Then add all the veggies and wrap it up.

So yummy and refreshing. It’s hard to put these down! Literally… if you put it down all the food will fall out. But.. so delicious too! haha.

    Had these for dinner tonight with a bowl of butternut squash soup (well worth the prep work by the way). These tasty bundles were delicious AND easy on my stomach!
