Green Apple Pistachio Salad

More green coming your way this St. Patrick’s Day! Add this as a side to my Chimichurri Steak and Asparagus recipe to really amp up the St. Paddy’s day theme. The crispy apple is refreshing after a warm steak meal. So this is a great dessert option as well.

Warning: You may or may not be subject to turning into the Hulk after these meals.

Ingredients:

  • 1 green apple
  • 2 tbsp. chopped pistachios
  • 1 tsp honey or agave
  • squeeze of half lime

Directions:

Chop apple with skin on to about 1/4 inch cubes. Roughly chop the pistachios. Add to a small bowl. Add honey or agave to the chopped ingredients. I like agave because it mimics the nuttiness of the pistachio. However, many argue the paleo-friendly nature of agave. Squeeze lime or apple cider vinegar to the mixture and fold everything together.

Feel free to double or triple this recipe depending on whether or not it’s used as a dessert or side. Or if you’re feeling gluttonous. 😉 MANGIA!
