Irish Flag Veggies
As you may have noticed I am not Irish. However I do like to get festive on holidays. But instead of corned beef, cabbage, and potatoes I’ve got you covered with typical veggies this St. Paddy’s day. Made to look like the flag of Ireland of course.
Ingredients:
- 1 bunch of asparagus
- 2 medium yellow onions
- 1 butternut squash
- olive oil
- sea salt and pepper
Directions:
Peel onion and squash and chop into 1/2 pieces. Snap off white ends of the asparagus. Toss with olive oil, salt, and pepper. Put veggies on baking sheet and place in 400 degree oven for 25 minutes. Flip the veggies once while cooking so there is a bit of caramelization on all sides.
Roasting veggies gives a nice nuttiness and crispy texture that you don’t get in a pan. Because of this you don’t need to season them with all crazy stuff. Salt and pepper will do the trick.
Arrange the veggies by color on a serving platter. I confess, I Googled the Irish flag JUST TO BE SURE. How embarrassing would it be to have the orange and green in the wrong spots published to hundreds of people? Yikes. Pair with your favorite meat dish or even my Chimichurri Steak meal!
